For those who like a little fizz…

Raspberry Rascal

Now this requires a little bit of preparation but is well worth the wait.

Depending on how many you’re looking to make you can amend this recipe as you like. This recipe serves 2.

Ingredients:

    • 1/2 bag of frozen raspberries
    • Lemonade
    • Ginger ale
    • A handful of mint
    • Ice cubes

Method:

1. Pour half a bag of frozen raspberries into a pan and heat them up until they make a thick syrup-like mixture. This should take roughly 10 minutes.

2. Once you have your mixture. You will need a sieve to get rid of the seeds from the mixture. This is not a smoothie so we want to remove the seeds for our raspberry madness mocktail.

3. Leave the sieved mixture for a few hours and chill in the fridge. (You could do this prep the day before you’re hosting a party and get it out the way).

4. Grab a jug from the cupboard.

5. Fill with ice.

6. Poor the mixture into the jug and top up with 2/3 lemonade and 1/3 ginger ale.

7. Add some mint into the pitcher and stir.

Now you have your Raspberry Rascal mocktail pitcher to share.

That’s Mint

The classic non-alcoholic mojito

Ingredients:

    • A small bunch of mint
    • Dash of Lime cordial
    • Soda water (or swap for a lemonade)
    • Juice of 2 limes
    • 1 tbsp of brown sugar
    • Extra brown sugar
    • Lots of ice!

Method:

1. Fill the glass up with ice and add a few mint leaves.

2. Crush together some mint leaves and brown sugar in a bowl using whatever you can find a spoon or the end of a rolling pin will do.

3. Squeeze the juice of 2 limes and add to the glass.

4. Top up with a little bit of lime cordial.

5. Add the soda water or lemonade to the glass of juice and cordial until filled to the top for a full glass.

6. Throw in the crushed mint leaves in brown sugar.

7. If you have any spare paper straws (or if you have those fancy metal reusable straws), then add this for the ultimate mojito feeling.

8. Enjoy your non-alcoholic mojito in style.

Fruity Mess

Ingredients for 4 cocktails:

    • 1 sliced apple
    • Sliced watermelon
    • 2 sliced limes
    • 1 sliced orange
    • 1/2 a sliced cucumber
    • Tonic or soda water
    • Lime cordial

Method:

1. Grab 4 glasses – maybe some cute little old jam jars like the ones above.

2. Pop a few ice cubes in the glass to keep things cool.

3. Top and fill the glass with fruit. A few slices of orange, watermelon, cucumber, and apple. Make sure it is full for the perfect fruity infusion.

4. Pour a dash (or more) of lime cordial in.

5. Top with your choice of tonic water or soda water so the glass is bubbling.

6. If you have any mint laying around why don’t you add a little to the top.

7. Grab some straws and stir before enjoying this refreshing fruity mocktail.
